Strawberry Rhubarb Loaf


1/2 cup butter, softened

3/4 cup sugar

1 egg

1 tsp vanilla

1/4 cup buttermilk

2/3 cup Miller 64

2 cup all purpose flour

1 tsp baking soda

1 tsp baking powder

1 cup rhubarb, chopped

1 cup strawberries, chopped


Preheat oven to 350 degrees Fahrenheit

In a stand mixer, combine the butter and sugar and beat until light and fluffy.

Add in the egg and vanilla and beat until combined.

Stir in the buttermilk and Miller 64 and mix until combined.

Add in the flour, baking soda, and baking powder. Mix to combine.

Fold in the strawberries and rhubarb until evenly mixed.

Pour mixture into two pre-greased loaf tins. Bake in preheated oven for 55 mins.
